Product Preview: Nearly Normal Cooking Flour

Many of us who subscribe to the newsletter at Glutenfree.com were told about Expandex Modified Tapioca Starch, touting it as kind of a God-send to the gluten free community. Upon going to the site and learning it was no longer available in sample form, nor was there any place to buy it for home cooks, I pretty much chalked it up to another disappointment.

That is until I heard about Nearly Normal Cooking Flour from Jules Shepard. It CONTAINS this magical, miracle ingredient - and the rave reviews are coming in fast and furious. While most of the in-store locations for this product are in the East (Maryland, Minnesota and North Carolina), it can also be purchased at www.nearlynormalkitchen.com or www.julesglutenfree.com

The website www.nearlynormalcooking.com contains recipes, links to in-store locations, and much more for this highly touted product. I plan to get some and try it - many people say it gives their baked goods the loft and tenderness that is missing when using other alternative flours. I would love to hear from anyone else who has already tried this "miracle flour" to let me know if it lives up to the hype!

  1. This is my FAVORITE gluten free flour--the only one I keep around and I use it for everything. I'm made my roommates Tollhouse Chocolate chip cookies with it this week and they won't stop talking about them--loved it! (you just use it in a 1-1 ratio with regular flour.) With the expandex the baked goods rise better and last longer and you can even order a sample pack of this flour now. I've used it for bread, muffins, pizza crust--you name it.

  2. GF Diva - My name is Zach - author of the Gluten Free Raleigh Blog (http://glutenfreeraleigh.blogspot.com/). I hosted an event this past weekend with Jules Shepard as the featured guest. She did a GF cooking demo with her flour product. It is designed as a cup-for-cup replacement product for any recipe. She cooked for nearly 40 people for almost 2 hours and made maple oat scones, berry scones, sandwich bread and chocolate chip cookies. They were all made using her flour product. THEY WERE AMAZING. You will not be dissapointed. She also has a cookbook with a ton of recipes that also use her flour product as well. Let me know if you have any other questions - but Jules is top-notch and the real deal. She is a great asset to the Celiac community and does a ton to raise awareness of the disease.

  4. I met Jules at the Gluten Free Food Expo in Delray Beach, FL last February. She was so knowledgeable regarding Celiac and gluten free baking/cooking - I could really tell she'd done her research. After chatting (and sampling) I bought a cookbook and 2 bags of Nearly Normal Flour - and am I ever glad I did - I LOVE this stuff! I was able to recreate several special recipes from my great-grandmother that I thought I would never taste again. Using Nearly Normal Flour expands our repertoire to where it was before diagnosis. You won't be disappointed!
